KURDISH BEANS AND THE DRIED LIME THAT WOULD NOT SUBMERGE

Last night I made Kurdish white beans from the cookbook A Taste of Persia. I’d been looking forward to using dried lime for the first time but damn if I could not get this little sucker to submerge. I think you really gotta knock some holes in it so the liquid will get in there and turn it into a simmering flavor turbine.

They turned out really great, with subtle cumin and turmeric flavor as well as the dried lime which wasn’t as intense as it could’ve been I guess. With Persian rice and pita chips this was a super quick and good meal. We watched episode 1 of Dark and later I watched 20 minutes of Breathless before konking out.

I’m not totally out the door on eating meat but I’m leaning that way. After watching the Damned documentary Don’t You Wish That We Were Dead on Amazon and learning that Captain Sensible went punk rock veg and still bounces around like a 16-year-old, I have even more motivation.
